Japanese Soba Noodles

Soba noodles are easy to be prepared. They can be served in hot soup (kake-soba) or served cold with dipping sauce (zaru-soba).
Here, I will describe how to prepare a bowl of Kake-soba, which can be served only in 15 minutes.

In Japan, people traditionally provide Soba noodels for next doors when they move into a new neighborhood. It is a token of becoming acquainted and is derived from a play on words as the sound of "soba" could also mean "close" (homonym) in Japanese. Today, Soba noodles are often served on New Year's Eve for good luck (toshikoshi-soba) since the shape of Soba noodles represents long life of well-being.
